Boil Most of Surface

Once there is a large part of the mixture that's boiled clear, you remove spoon from heat.

Picture shows spoon on counter. The whole front of the spoon is pretty much boiled.
The center of the spoon is a good clear pool from which the liquid will be drawn up.
